Atlanta weather is so funny.  I don’t think I’ll ever not be amused at the drastic shifts in temperature.  One week ago today my aunt almost cancelled my cousin’s wedding for Saturday because the snow and ice were threatening to wreak havoc (the wedding went off without a hitch, by the way, it was lovely).  And these past three days have been filled with sunshine and temps in the high 60s. I’ve laid in the grass twice and dozed off both times, with my face pointed at the sun, soaking up what’s been missing from my life all winter.  (The second time I was suddenly awoken to Frank getting an uncharacteristic bout of energy to chase after our neighbor’s cat.  Which means I had to summon an uncharacteristic bout of energy to chase after Frank…)

Anyway, spring is coming.  I can feel it.  I have already started to spot a few flowers sprouting out of the ground, and even a tiny daffodil already in full bloom in my back yard.  And last night we were treated to a chorus of frogs in our woods; they’re getting excited for springtime too.

Superfood Cereal – Homemade Chia Seed, Buckwheat, and Hemp Cereal

This post is late.  It’s been ready to go for a while, but I’ve been under the weather the past few days and couldn’t bring myself to post it.  I’m excited to share it though.  Because you can buy this $9 superfood, super healthy “cereal” in the store for a pretty small bag or you can make it yourself and save a ton of money.

I first saw this awesome cereal called Qia sitting on the shelf at Publix and the word “superfood” on the packaging immediately caught my eye (you know how much I love superfoods).  The only ingredients in it were chia seeds, buckwheat groats, and hemp seeds, plus some dried fruit for sweetness and flavor.  All you have to do to prepare it is let it soak in milk for a few minutes (any type of milk will work) and it’s ready to eat.  And it’s yummy!  I impulsively bought it and was really excited about the product.  Parker likes it too, so it’s husband approved.  :)

We started going through those little bags so quickly that I knew I had to try to make some myself by buying the ingredients in bulk and adding them together.  It seemed so simple that I would be crazy not to.  And it really is very simple.

I now keep a big jar of it in the pantry (well, in a cabinet since we don’t have a pantry…) at all times.

Nutritionally speaking, this cereal is packed with protein, fiber, healthy fats, vitamins, and minerals, plus is very low in sugar, and even has some Omega-3’s thrown in.  It’s vegan friendly and gluten free too.  And buckwheat is actually a seed (with a fantastic nutrition profile) and not actually “wheat” so it’s grain-free too.  You don’t have to eat a lot of it to feel full, but it will keep you feeling satisfied until lunch.  I like to use coconut milk (here’s how to make your own) and add some fresh berries on top, but you could make it any way you like.

You can change this recipe up with any kind of dried fruits or nuts you wanted.  I have lots of ideas that I’ll be sure to share but here is the basic recipe.

Chia Seed, Buckwheat, and Hemp Superfood Cereal – with Cinnamon Apples, Raisns, and Walnuts.

3/4 cup buckwheat groats (available in stores or online here)

3/4 cup chia seeds (available in stores or online here)

3/4 cup hemp seeds (available in stores or online here)

1/2 cup raisins

1/2 cup dried or dehydrated apples, finely chopped

1/2 cup walnuts

1 teaspoon cinnamon

Add everything together, stir, and store in airtight jar.  When ready to serve, add 1/4 cup to bowl and pour about 1/4 to 1/3 cup milk over (enough to just barely cover, but not so the cereal is swimming) and let sit for 3-5 minutes to soften.  Top with fruit if you’d like.

Parker wanted to build a snowman so bad, but couldn’t find his gloves.  He didn’t get very far. :)

Happy Friday!  I’m glad it’s the end of this week.  I battled a cold all week and am finally – finally! – feeling pretty much back to normal today.  This weather was pretty exciting stuff for us.  Two snows in one year; it doesn’t happen much around these parts.  My cousin is getting married tomorrow and it was touch and go for a while if there would even be a wedding since she’s flying in from Utah and her parents are driving down from Virginia and all the ice was causing shutdowns and delays.  But it looks like it’s going to happen after all and I’m excited to spend some time with my family celebrating this new marriage (you know how much I love weddings).

Oh, and happy Valentine’s Day!  Whether you have big plans or no plans for this “holiday”, I hope it’s a good one.  I think Parker and I will enjoy a quiet evening at home, but I never pass up an opportunity to make googly eyes at him.  Valentine’s Day offers the perfect excuse.  :)

Yesterday, during my sick day, I spent most all day in bed in and a lot of time perusing the internet, as one does.  And I found this graphic artist from China named GH Yeoh who does this series called “Mr. Pear” that I absolutely love.  And then I found that all the images I love are for sale on Etsy.  It was the kind of excitement that instantly leads to slight hyperventilating, opening tab after tab to see as many of the prints as quickly as possible.  A visual binge, if you will.  Anyway, I think they are so fun and I thought I’d share them with you.

This is my attempt to make sick days look cozy and decadent, but we all know that real sick days are anything but.  I haven’t been sick in years – literally, years – but I am down for the count right now and have been for a few days.  Atlanta is expecting another wintry snow and ice storm so I went out yesterday to get groceries and fighting the massive crowds probably didn’t help matters.  But the good news is that Parker gets to stay home from work today so now it’s his turn to take care of me.  He’s making eggs and toast now and demanding I get off my computer and rest.

I better to cut this post short anyway because my brain seems fuzzy and I can’t seem form sentences they way I’d like, so I think I’ll go back to bed now.
