This is definitely not a very sexy post, but I thought I would share anyway because it’s kind of brilliant.  A way to sneak in one of the best-for-you superfoods in to your smoothies without much hassle and without worrying about your leafy greens wilting or going bad before you get a chance to use them: behold, the power of kale cubes.

I use a 12-serving muffin tin and these are great because once you make them, you have 12 servings of vegetables (so about two weeks worth of smoothies if you drink around one per day) to drop in to your blender along with whatever else you want in your smoothie.  Also, since they’re frozen, there’s no need to add ice and no worry of your drink getting watered down.

This is so easy.  Really all you need is kale and water, plus a blender and a muffin tin.  I put in as much kale as possible, one 16-oz package of pre-shredded or 3-4 bunches of the big leaves.  I pack the blender tight with kale, then add a little water, about 2 cups (not too much because I want these as kale-dense as possible) and blend on high until it’s completely liquified.

Then, just pour in to muffin tins, freeze for about an hour and ta-da!  You now have perfectly portioned, frozen kale cubes for adding to smoothies.

Here’s a tip: if you’re having trouble getting them to pop out of their muffin tin mold, flip it over, run hot water over the bottom of the muffin tin and they’ll fall right out.  Work one section at a time though so you can catch them easily.
Kale Cubes for Smoothies4 by All Sorts of PrettyI make a smoothie just about every day, right before I go to the gym so it’s waiting on me when I’m finished with my workout.  My favorite recipe is one scoop vanilla whey protein powder, one kale cube, a tablespoon of chia seeds and my homemade almond milk (or coconut milk, depending on what I have on hand).

Here’s another tip: Add some berries (fresh or frozen) to change the color from green to purple if you or your kids have a problem with the green color.

Also, I’ve found the best way to get the kale cube incorporated nicely with  no chunks is to pulse the blender several times until it’s completely crushed up, then continue blending.

Since the kale is prepared this way, I never waste any of the good greens and I never have to worry about finding a half-bad batch of kale in the fridge when I’m trying to run out the door to the gym.  This way is so convenient and so much faster.

Spinach would work perfectly for this as well, whatever you prefer.  Both are super nutritious, but kale trumps spinach in the vitamins and minerals department.  This info-graphic is a great visual explaining some benefits.

    I just did this tonight… and they popped out perfectly like you said after running under hot water :) I bought kale at a farmer’s market today and have never tried it before… going to attempt a green smoothie tomorrow! I’ll have to use a better blender/food processor next time… I can tell there’s going to be a bit of texture in my smoothie, yours look nice and smooth!       I am new to green smoothies, and haven’t acquired the taste for kale yet ;) I still eat it in all my smoothies due to its benefits, but I’ve found that if you put part of banana in, it really cuts the taste and the banana flavor shines through for just a few more calories. Also, kroger has low carb carbmaster yogurt, regular and drinkable, that i’ve found adding half a thing of drinkable yogurt with even 2 cups of kale and a banana and ice/water still leaves it tasting like a Smoothie King smoothie… not something that is as healthy as two fruits and tons of kale!

    I love this solution. No (every) morning prep! No waste! Here is my favorite smoothie as a ‘thank you’ (all ingredients to taste and smoothie thickness): kale, almond milk, almond butter, frozen mango and cinnamon.

    Good idea, but I’d definitely blanch the kale before putting it in the blender. Light cooking lets cruciferous vegetables have their maximum nutritional impact. Most other vegetables, too, as I understand.

        Blanching is used when freezing veggies to prevent breakdown. Freezing does not completely stop the breakdown of enzymes, it slows it down. By blanching first, you are shocking into slowing down even further. It also helps to maintain color and texture of raw veggies. Hope this helps.

    Been getting so much kale lately, I’ve decided that this is an excellent way to keep it around for use not only in smoothies, but like the pureed soup recipe Katy has, you can easily drop a couple cubes into that. Also I’ve been trying to get more fiber into my pups. I can add to their food with a bit of chicken broth. Great idea!

    Unfortunately kale is a low-acid vegetable and requires blanching before freezing to ensure food safety. Otherwise you are at risk of some nasty enzyme growth which can alter flavour & cause stomach upset. Also blanching helps preserve colour and slows loss of vitamins.     I just freeze my kale leaves in a ziplock, that’s it. Sometimes I will crush them up once frozen to conserve freezer space, and then I can scoop out kale chips.

I tried pouring some kale juice in and wasn’t a huge fan, but am wondering if this is perhaps the alternative I’ve been looking for.
