I also call this “Farmer’s Market Salad” because cucumbers, tomatoes and radishes are the most abundant vegetables at my farmer’s market right now. This is an easy, feel good salad that’s perfect alone for lunch or as a side salad with dinner.
You can make lots of different variations of this salad depending on what’s available and what you like. You can also change up the amounts of ingredients too for what suits you.
Cucumber, Tomato & Radish Salad
2 large tomatoes
2 cups of radishes
1/2 large red onion
2 Tablespoons olive oil
1 Tablespoon red wine vinegar
2 Tablespoons fresh dill (or 1 Tablespoon dried)
salt and pepper to taste
1/2 cup crumbled feta or blue cheese (Optional, but delicious! I didn’t add any that for these photos, but I often do.)
Thinly slice cucumber, radishes, and onion (I like to use a mandolin to make it go faster). Remove seeds from tomato (to keep it from getting soggy) and cut in to large cubes. Add vegetables to bowl and toss with olive, vinegar, dill, salt and pepper until evenly coated.
I will make this, or a variation of this salad, just about every week in the summer. It’s so light and fresh, easy to throw together and a delicious way to eat a lot of veggies. It goes perfectly with so many other dishes too, so I’ll make a batch at the beginning of the week and have it with dinner several times throughout the week.
